EASY Schmeezy chowder recipe!
I first learned this as “Cowboy” Corn Chowder, but now I use it for whichever team we are supporting at the time (Steelers, Stars, etc)

1 Roll of good quality Sausage (favorite is Jimmy Dean)
1 Can of Cream of Mushroom Soup
1 Can of Corn
1/4 of onion chopped up
1/2 Soup Can of Milk (I use soy milk)
1/2 Soup Can of Water

Scramble up the sausage. I do not drain the grease if I am feeling lazy. Plus, the brand I use is not as fatty as some other roll sausages I have used in the past. Anyway, scramble it up. Then, add the chopped onion. Pour in the corn – I don’t drain the corn. The corn juice adds flavor. Pour in the can of soup. Use the can to measure for the milk and water. Now, simmer on low until the onions are tender. (You can scramble the onions with the sausage, but I prefer the onions to have some density, so I put them in later during the simmer stage).

Serve with crackers, or hearty bread (like a Sourdough or a dense all grain)

Enjoy!!

1 Package of Frozen Corn
8 oz of cream cheese
1/2 stick of butter
Sliced Jalapeno (choose your poison, more = spicier)

Preheat the oven to 350 degrees and melt the butter. Soften the cream cheese in the microwave. Dice your jalapenos. Mix the corn, cream cheese, butter and diced jalapenos. Pour the mixture into a greased pan and smooth it out evenly. Throw some of the sliced jalapenos on the top for a garnish. Bake in the oven for 30-45 minutes until thoroughly warm. Use Frito scoops, or tortilla chip scoops, or regular tortilla chips. YUMMMY OOOO

Meet…CHOCOLATE September 16, 2009

Chocolate, the 5th food group

Chocolate is a vegetable: Chocolate is derived from cocoa beans. Beans = vegetable.

Sugar is derived from either sugar CANE or sugar BEETS. Both are plants, which places them in the vegetable category. Thus, chocolate is a vegetable.

To go one step further, chocolate candy bars also contain milk, which is dairy. So candy bars are a health food.

Chocolate covered raisins, cherries, orange slices and strawberries all count as fruit, so eat as many as you want.

If you’ve got melted chocolate all over your hands, you’re eating it too slowly.

The problem: how to get 2 pounds of chocolate home from the store in a hot car. The solution: eat it in the parking lot.

Diet tip: eat a chocolate bar before each meal. It’ll take the edge off your appetite, and you’ll eat less.

If I eat equal amounts of dark chocolate and white chocolate, is that a balanced diet? Don’t they actually counteract each other?

Chocolate has many preservatives. Preservatives make you look younger.

Put “eat chocolate” at the top of your list of things to do today. That way, at least you’ll get one thing done.

A nice box of chocolates can provide your total daily intake of calories in one place. Now, isn’t that handy?

If not for chocolate, there would be no need for control top pantyhose. An entire garment industry would be devastated. You can’t let that happen, can you?

Meet..The Easiest Sweet Peppers July 30, 2009

My sister-in-law gave me this recipe for probably the easiest sweet peppers.  If you want something to take the edge off of hot jalepenoes, this will do the trick.

Take a can of jalepeno peppers.  It can be the sliced or whole.  Pour all the juice out of the can.  Then, take sugar and spoon into the can, tapping and shaking the can to make sure all the sugar moves all the way to the bottom.   After the can it completely full, take a piece of aluminum foil and put tightly over the top of the can.  Sit the can on the counter for 3 days.  After 3 days, remove the foil and enjoy.  You will have sweet jalepenos to enjoy with any Tex Mex meal (or any other meal!).  You can refrigerate in a covered plastic container for about a week, IF they last that long!

Meet … The Best Ranch Dressing in Texas July 8, 2009

We are ranch dressing fanatics in our household.  I’ve tried every ranch dressing on the store shelves, and tried them at all the restraunts.   I made a home made one today that will knock you right off your horse!  And, it’s so SIMPLE.

1 packet The Original Ranch Buttermilk Recipe Salad Dressing Mix

Follow the directions on the back, which is simply 1 cup of Buttermilk and 1 cup mayonaise.  The best thing is that I used the generic brands with both these ingrediants.

YUMMY-O!  I hope you enjoy it too!!
